White Bean Chicken Chili

So maybe I almost cut off my finger and started a small fire on the stove, but this chili was SO worth it!

White Bean Chicken Chili

White Bean Chicken Chili


1 whole chicken
3 small zucchinis
1/2 large onion, diced
1 Tbsp olive oil
6 gloves of garlic, pressed
1 can mild Rotel, drained
1 can petite diced tomatoes, drained
3 cans white beans (Cannellini), drained and rinsed
1 1/2 to 2 Tbsp chili powder
1 tsp salt
1/4 – 1/2 tsp pepper
2 cups shredded cheddar cheese, divided

First, put your whole raw chicken in a large pot and cover with water. DO NOT waste your time cutting that sucker up. Bring to a boil over high heat, then reduce heat and simmer with a lid for 1 1/2 to 2 hours. In the meantime, shred your zucchini and saute the onion with olive oil in a skillet over medium heat. When the chicken is ready, remove it from the pot and set aside to cool. Strain the chicken broth, and reserve about 6 cups for the chili in the pot. To the pot, add the shredded zucchini, sauteed onions, pressed garlic, both cans of drained tomatoes, the drained beans, chili powder, salt and pepper. Bring to a boil and simmer for about 25 minutes. While it is simmering, remove the chicken from the bones and chop (or shred with your fingers like I do). Stir in the chicken and 1 to 1 1/2 cups of shredded cheese, and simmer until the cheese has melted. Serve and enjoy! Papa Train and I discussed that this chili would be great with some organic tortilla chips(or Fritos if ya just don’t care!).
