Strawberry Bread

Another good recipe to use up some of those yummy freshly picked strawberries…

Mom’s Strawberry Bread

3 cups flour
2 cups sugar
1 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
4 eggs, beaten
20 oz. pureed strawberries
1.25 cups vegetable oil

Mix ingredients as listed, thoroughly. Pour into two greased and floured loaf pans. Bake at 350 degrees for 1 hour and 10 minutes. Or fill 7 mini loaf pans and bake at 350 degrees for 35-40 minutes.

(You can also add a cup of nuts, but we have serious nut allergies over here.)

    Totally intended to make this last year with all our strawberries, but now I’m determined to do it this tomorrow with some of the overflowing buckets we picked. ;). Thanks!
