This recipe originally came from a Pampered Chef cookbook. It’s one of our favorite ways to eat steak!
First, you mix:
- A head of chopped cilantro
- A can of drained petite diced tomatoes
- A splash of lemon juice
- 1-2 cups grated cheddar cheese
You take about 5 grilling steaks (well, 5 works in our family), season them with salt and pepper, and cook them on a grill, or in my case, a grill pan.
Once the steaks are done to your liking, top with the cheese/tomato mixture. Oh. So. Yummy.
You can put an aluminum foil tent over the steaks to melt the cheese if you like, but my crew is happy just topping them like this. I love the cilantro and tomato flavors along with the juicy steak!
