There is just something cozy and comfy about a great big pot of soup. I love soup. I’d cook a soup every week of the year if my family would let me get by with it, but unfortunately, when the temps outside push 100 in our Texas summers, soup is something they frown upon.
But in the fall — they can’t complain. Who could pass down the yumminess of a hot bowl of nourishment when the temps begin to drop?
It would be quite hard for me to pick my favorite kind of soup, but I do have several that make the “rotation” on a regular basis.
So which soups are on my rotation? Let me make you a list. (Okay, okay, in alphabetical order so no soup gets special treatment):
Beef Stew, like a soupy roast — with lots of veggies and plenty of ‘taters.
Broccoli Cheese Soup, from the Pioneer Woman
Cheeseburger Soup from Dine & Dish
Chicken & Dumplings — and yes, I use canned biscuits as my dumplings. What of it?
Chili, not Texas Chili, which is thick and meaty (although I like that too), but my sister-in-law’s soupy version with beans.
Lasagna Soup from Mel’s Kitchen Cafe. This one is AMAZING, and quickly became a family favorite.
Pinto Beans, always with cornbread. Yum!
Potato Soup, so easy in the crock pot.
Taco Soup - if you don’t have exact ingredients, just make sure to have ground beef, a few veggies & taco seasoning.
Tomato Soup by Rachel Ray. I fell in love with this recipe years ago, and it’s become a soupy staple in our home. So yummy with grilled cheese sandwiches!
