I big puffy heart love squash. Zucchini is my absolute favorite veggie. So, when my dear friend Kathy posted on Facebook that she was making smothered squash, I had to get more details! She was happy to oblige, and I have made this dish about 5 times in the past month since learning about it. It’s SO good!
In Kathy’s version, you start with sauteing onions in some butter, but I’m more of a garlic kind of girl, so that’s what I started with.
Next you chop up some squash, and season it with some creole seasoning and throw it in the pan. A couple of times (as in the pictures shown), I’ve also thrown in some red potatoes. I had to go out and buy creole seasoning for this recipe. Oh My! Where have you been all my life?? Such a nice “kick”!
Anyway, toss the veggies in the pan, cover, and cook on medium-high for about 20 minutes or so, stirring occasionally so it doesn’t stick to the bottom of the pan. It doesn’t need any liquid, since there’s so much water in the squash already.
After a while, it cooks down to this…
