Santa Fe Chicken Enchiladas

I discovered this at the store……….



Yum! So, I came up with a simple chicken enchilada recipe that would be great on a week night or for when company comes.

First, mix 2ish cups of cooked shredded chicken with a container of Santa Fe Blend Philadelphia brand Cooking Creme and a can of diced tomatoes, drained.



Next, spoon some of the chicken mixture down the middle of 10 flour tortillas and roll up.



Arrange the 10 enchiladas in a 9 x 13 dish sprayed with cooking spray.



Pour a can of red enchilada sauce over the enchiladas.



Sprinkle with 1-2 cups of shredded cheese.



Bake in a 350 oven for 25-30 minutes.



Serve them up with some corn and beans and enjoy!



Santa Fe Chicken Enchiladas

2 cups cooked shredded chicken
1 can diced tomatoes, drained
1 (10 oz) Santa Fe Blend Philadelphia brand Cooking Creme
10 flour tortillas
1 can red enchilada sauce
1-2 cups shredded cheese

In a bowl, mix chicken, drained tomatoes and Santa Fe Blend Cooking Creme. Spoon chicken mixture down the center of 10 flour tortillas, and roll up. Arrange in a 9×13 cooking dish sprayed with cooking spray. Pour enchilada sauce over enchiladas and top with shredded cheese. Bake for 25-30 minutes. Enjoy!
