Roasted Sunflower Seeds

Well, our Sunflower House never quite made it to fruition.  I’m afraid the morning glories and moonflowers took over.

Here’s a picture from last month:

Here’s one from today.  The vines have completely knocked over all the sunflower stalks except for one.  But they’re beautiful to look at in the morning!

This is one of the moonflowers.  They are SO pretty!

Anyway, back to the sunflowers.  We did have a couple get large enough to seed.  Here’s a closeup!

We roasted them, which was super easy… and quite yummy!  First, soak them overnight in saltwater.  (I used 2 cups of water and 1/4 cup salt).  In the morning, lay them out to dry on a paper towel.  Spread them on a cookie sheet and roast them for 30-40 minutes at 300 degrees, stirring occasionally.  When they’re done, let them cool, and store in an airtight container.  Easy Peasy!
