If you haven’t eaten oven roasted broccoli; Shame. On. You. It’s good. REALLY good.
And what in the world could be better than oven roasted broccoli?
Oven roasted broccoli with garlic flavored Panko (Japanese style breadcrumbs) and Parmesan cheese is better! Oh. My. YUM.
Panko Roasted Broccoli
2 heads of fresh broccoli, rinsed, dried and cut into florets
1/2 cup garlic flavored Panko breadcrumbs
1/4 cup shredded Parmesan cheese
2 tablespoons olive oil
salt and pepper to taste
Preheat oven to 425 degrees. In a large bowl, drizzle olive oil over broccoli and toss with hands until evenly coated with oil. Sprinkle Panko and Parmesan cheese over broccoli and toss again. Spread broccoli evenly on a parchment paper lined cookie sheet. Sprinkle with salt and pepper and bake for 15 minutes. Serve immediately and enjoy!
