Oatmeal Warm and Sweet

This recipe comes from the Cloverdale Church of Christ Cookbook and was submitted by Tia Stone.  It is super yummy and will be eaten by people who claim to not like oatmeal. I am posting here because Mama Tutu bought 25 pounds of rolled oats, and her kids don’t eat oatmeal.  When I make this for MOPS (Mothers of Preschoolers), people ALWAYS ask for the recipe.  Thanks Tia!

Oatmeal Warm and Sweet

1/2 cooking oil (I use 1/4 cup melted butter and 1/4 oil)
1 cup sugar (I use 1/3 brown and 1/3 white)
2 eggs
1 cup milk
1 tsp. salt
2 tsp. baking powder
3 cups oatmeal (regular or instant is fine)
1/2 cup raisins (optional-I usually skip)
1/2 cup sliced almonds (optional-I usually skip)

(I add 1/2 tsp of vanilla because Jacob  likes it.)

Topping:

1 Tbs brown sugar (I usually skip…….I’m lazy)

Preheat oven to 350. In a large bowl, stir ingredients together. Place in a GREASED casserole dish.  Bake for 30-32 minutes. (I like to mix the ingredients together the night before so it is all ready for the oven in the morning.)

This is a GREAT recipe that can be tweaked to your taste! My boys GOBBLE it up. :)
