Oatmeal Creme Pies

Disclaimer:  These would not be on the “healthy” list… and they’re quite rich.  But soooo yummy.

Ingredients (cookies):
2 cups brown sugar
3/4 cup softened butter
2 eggs
2 cups flour
1/2 tsp. salt
2 cups oatmeal
1 tsp. cinnamon
1 tsp. baking powder
2 tsp. baking soda
3 Tbs. boiling water

Cream sugar and butter.  Add eggs & beat.  Add the next 6 ingredients.  Dissolve the baking soda in boiling water and add last.  Mix well.  Drop in mounds onto cookie sheets and bake at 325 degrees for 12-15 minutes.  You don’t want to overbake, but make sure they are cooked all the way through.

Ingredients (fluffy frosting filling):
3 cups powdered sugar
1/8 cup flour
1 cup shortening
1/2 cup water
1/2 tsp. vanilla

Mix ingredients and beat for 10-15 minutes.

Once the cookies have cooled, take two cookies and place a huge dollop of filling between them to make this Little Debbie inspired sandwich cookie.
