Mama Train’s Pork Fried Rice

Oh, yeah! This one is good. And easy. And maybe a little healthy. Maybe.


Mama Train’s Pork Fried Rice

1 – 1.5 lbs pork steak, trimmed (or pork chops, or pork tenderloin…….you get the idea)

1 can of beef broth

1 cup of brown rice

2 1/4 cups chicken broth

3 eggs

1 Tbl butter

2 Tbl oil

soy sauce

salt and pepper


Place pork steak and beef broth in a crock pot and cook on low for 4-5 hours (adjust time and temperature setting for your crock pot). In the meantime, bring the chicken broth to a boil and add brown rice. Reduce heat, cover and simmer for 40-45 minutes (do not take the lid off during this time!!). When the rice is done, fluff the rice with a fork and let cool.  You can place the rice in the refrigerator until you’re ready to whip up your fried rice.  When the pork steak is done, remove from broth and slice into bite size portions. 30 minutes before you’re ready to chow down, melt the butter on medium heat in a large skillet or pot.  Scramble your eggs in the butter and then remove from skillet.  Add the oil to the skillet and heat over medium heat. Stir fry the rice in the oil for about 5 minutes.  Add the meat and eggs, and the salt, pepper and soy sauce to your taste.  Heat through and serve!

    This is definitely going into the rotation! Yummy! I thought it would be hard but this sounds easy and very make-ahead.
