Okay, so I know what you’re thinking. Grilled Okra? Really?
Yes, really. It’s scrumptious. And it’s one of my 10 year old daughter’s favorite foods. I have to admit, I was skeptical at first too. I mean, I’m a good southern girl, and I like my okra the way God intended it… FRIED. Mmm… and pickled too. YUM. So, when I first heard my friend Lana tell me how good it was grilled, I had my doubts. However, I’m quite happy to admit that she was right. It’s quite yummy.
So, how do you grill okra? Simple. Rinse your okra and put it in a bowl. Toss with olive oil, a splash of lemon juice and some salt & pepper (or even a grilling blend to make it even easier). Then you just line them up on some skewers and cook them a few minutes on each side on your grill or grill pan. Easy peasy. And oh so yummy. Not convinced? Think not you’ll like them, so you say?
