Stop eating gluten. What!!??!!!
So, my doctor has strongly encouraged me to eliminate gluten from my diet. I will not bore you with the details, but it is HARD to stay away from gluten! She would also like for me to be eating a lot more protein.
Check it out!
- 2 slices of turkey for each muffin cup
- 1 egg for each muffin cup
- salt, pepper and shredded cheese
- spray muffin tin with non-stick cooking spray
- line muffin tin with 2 slices of turkey
- beat eggs with a fork and pour into turkey lined muffin cups
- sprinkle with salt a peper
- bake at 375 for 20 minutes
- remove from oven and top with shredded cheese
- after the cheese melts, Enjoy!
