Gluten Free Breakfast: Protein Cups

Stop eating gluten. What!!??!!!

So, my doctor has strongly encouraged me to eliminate gluten from my diet. I will not bore you with the details, but it is HARD to stay away from gluten! She would also like for me to be eating a lot more protein.

Check it out!

Protein Cups

  • 2 slices of turkey for each muffin cup
  • 1 egg for each muffin cup
  • salt, pepper and shredded cheese
  • spray muffin tin with non-stick cooking spray
  • line muffin tin with 2 slices of turkey
  • beat eggs with a fork and pour into turkey lined muffin cups
  • sprinkle with salt a peper
  • bake at 375 for 20 minutes
  • remove from oven and top with shredded cheese
  • after the cheese melts, Enjoy!

    I’ve made these and also added tomatoes, mushrooms, and a bit of half n half to make the eggs go further. I’d love to try it with red, orange, and yellow peppers :) They are yummy & even good warmed over.

    I’ve also tried these and have done ham, green chili’s and sour cream in the mix. YUM!
