Frugal Menu

It’s crunch time around here.  I’ve been trying not to spend any money this week… but when we go in the kitchen, it appears that pantry is bare.  However, it’s really not – I have a lot of good pantry staples, just nothing “quick” to eat.  So, yesterday, I went to the corner grocery and paid cash for milk (we were completely out) and tortillas, and I made up a meal plan to get us through the next week without spending any additional $$.  Cooking from scratch, here we come…

Thursday (today) – Ranch Style Beans, Mozzarella Eggrolls (I got the ingredients to make these last week, but haven’t made them yet), I also have chicken breasts and thighs in the crock pot.  I’m going to shred the chicken to use in recipes later in the week.

Friday – Chicken Florentine with Pasta (I don’t have bowties, but will substitute some pasta that I do have).

Saturday Lunch – Pasta.  I will make some fresh pesto, and we also have some leftover alfredo sauce in the freezer, if someone wants that instead.

Saturday Dinner – Soft tacos, Brown Mexican Rice

Sunday Lunch – Chicken Noodle Soup (homemade)

Sunday Dinner – not planned – but I just found out we’re not meeting for our life group, so I’ll need to come up with something or do leftovers.

Monday – Potato Soup in Bread Bowls (will do half white, half wheat)

Tuesday – Breakfast for dinner (eggs, bacon, waffles)

Wednesday – Spaghetti with Breadsticks

Thursday – Black Beans & Cornbread

That should get me through the next week!  Most of these meals are frugal in and of themselves – but much more so since I already have all the ingredients and won’t have to go grocery shopping!  We may have to go get milk before it’s over, but that’s it.  Lunches will be easy things – smoothies, quesadillas, mac & cheese, etc.  I’ll probably make some bread and we may do sandwiches.  We also have an abundance of organic popcorn that I can pop for snacks, and we have pickled okra and [chips and] salsa in jars.

    We eat a lot of pasta.

    The recipe for mozzarella eggrolls looks good and I found a link to non-fried mozzarella sticks on the page.

    Good plan – great to see your creativity at work! On the program Chopped, one of the comments that various chefs make is they have learned to cook with what they have. Unfortunately, for us, it’s either spaghetti or Whataburger! We did have several tomato sandwiches on sour dough bread (tomatoes from Froberg’s) this week that were good. In the freezer I do have bean burritos. And of course there is always Golden Corral.
