F is for Flautas

The other day, I came across this recipe on Pinterest for Baked Chicken and Spinach Flautas that I thought looked Yum-E. But, we live in a dry county and I didn’t have any beer, so I came up with a similar recipe that I’ll call:

Mama Train’s Flautas

2 cups cooked, shredded chicken (I cooked 2 boneless, skinless chicken breasts in the crock pot seasoned with salt, pepper and garlic powder)
8 flour tortillas, burrito size
2 cups fresh spinach leaves
1 cup salsa (I used Mama Tutu’s homemade salsa)
1-2 cups shredded cheese (I had sharp and colby on hand)
cooking spray
sour cream and guacamole for dipping (I buy Wholly Guacamole in the produce section)

Preheat oven to 425 degrees and coat the bottom of a cookie sheet with 1-2 tablespoons of oil.  Arrange several spinach leaves down the center of each tortilla.  Top with shredded chicken, salsa and shredded cheese.  Roll up and secure with a toothpick.  Place flautas on the cookie sheet, spray with cooking spray and bake for 10 minutes; turn and bake for an additional 6-8 minutes.  Cut in half and serve with sour cream and guacamole.

Let me just say that I was so pleasantly surprised at how Yum-E these were! Ryan thought they rocked, too. Give them a try and let me know what ya think. :)
