I am loving the hint of fall in the air! Time to dust off the crock pot and make some of those nice warm end-of-the-day meals. Now in all fairness, I do use my crock pot year round – but this is soup weather, so bring it on!!
This recipe is for a quick and easy potato soup in the crock pot.
3-5 lbs. potatoes (use whatever kind you like… I used gold potatoes in these pictures)
1 box (4 cups) chicken stock
2 cups half and half (or 1 cup half and half, one cup sour cream)
3 oz. bag of bacon pieces
Peel and chop your potatoes and put them into the crock pot.
Cover with the chicken stock. Also mix in some onion powder and garlic powder (I just do a couple shakes of each).
Let cook on LOW for 6 hours. After 6 hours or so, potatoes should be done. Mash them with a potato masher.

Next pour in the half & half. If you have sour cream, you can do one cup half and half, one half sour cream, and it’s really yummy this way. I was out of sour cream, though, and didn’t want to make a run to the store.
Stir, then add in the bacon:
And about a cup of grated cheese:
Stir all together and serve. YUM.
