Chocolate Chunk Cookie “Cake”

My middle daughter didn’t want a birthday cake this year, so I decided to make her a birthday cookie instead.  It turned out super yummy, making bar-like cookies!

1 cup butter flavored shortening
1 cup sugar
1/2 cup brown sugar
2 eggs
2 Tbs. water
1 Tbs. vanilla extract
1 tsp. baking soda
1/2 tsp. salt
3 cups flour
3 pieces of baking chocolate, chopped into thick chunks

Preheat oven to 375 degrees.  Mix all ingredients except for flour and chocolate, and beat until creamy.  Mix in flour.  Stir in chocolate chunks.  Spread batter onto a greased stone pizza sheet, leaving room around the edges to spread.  Bake for 12 minutes.  Cookie should still be soft.  Let cool before adding frosting.

Frosting:

1/4 cup water
1 Tbs. meringue powder
3 cups powdered sugar
1/4 (rounded) cup shortening
1 tsp. vanilla

Beat water and meringue powder until stiff.  Add vanilla and 1 cup of sugar, then alternate adding shortening and sugar, beating at high speed, adding water as needed until it reaches the desired consistency.
