Chicken & Cabbage Stir Fry

stirfryI’ve been really digging cabbage recipes lately for whatever reason.  We’ve had this dish a couple of times, and I like it.  Honestly, it’s not the kids’ favorite, but I have relatively picky eaters, and hey – if they’re hungry enough, they’ll eat!

Chicken & Cabbage Stir Fry

1 lb. ground chicken
1 head cabbage
1 tsp. grated ginger
1 tsp. grated garlic
2-3 Tbs. tamari (soy sauce)

Cook your ground chicken in a skillet.  While it’s cooking, chop your cabbage.  I use a microplane grater to grate the ginger and garlic cloves.  When meat is cooked, stir in the seasonings.  Next, add the cabbage and soy sauce.  I use 2-3 Tbs… just use your judgement “to taste”.  Gently stir until cabbage is cooked and everything is well stirred.  Fast & easy!  Yum!
