Brussels Sprouts get such a bad wrap. As a child, we were never served brussels sprouts, and I was such a picky eater back then, I’m pretty sure I would have turned up my nose at the mention of them. After all, it’s one of “those” veggies that we aren’t supposed to like. But within the past year or two, I’ve discovered the goodness that are fresh brussels sprouts. Until recently, the only way I’ve cooked them is to roast them in the oven after drizzling them with a little olive oil and a sprinkling of garlic (YUM!). Then I happened THIS recipe on Pinterest and couldn’t wait to try it! I simplified the recipe a little bit, and it was OH. SO. YUMMY. I’ve made it twice in the past two weeks.
For my version, I just used three ingredients: Brussels sprouts, bacon & 1 avocado. Cook about 1/2 a package of bacon until it’s nice and crispy. Set aside. While the bacon is cooking, chop up your brussels sprouts. Pour them into the bacon grease and toss, cooking for about three minutes or so on medium heat. Crumble the bacon, add it back on top. Turn off the heat and then slice an avocado and gently toss it in to the brussels and bacon.
Super easy and super yummy! What’s not to love about bacon and avocado? And to me, the brussels sprouts taste almost sweet. But of course, I haven’t eaten any sugar for over a month either, so I don’t know that you can trust my sweetness-meter.
