Broccoli Cheese Casserole

broccolicasseroleThis is a dish that tastes like home to me, because my mom made it frequently when I was growing up.  I’m not sure where she got the original recipe, but to me, it will always be “Mom’s Broccoli Casserole.”

Mom’s Broccoli Casserole

1 tsp. salt
1 box frozen broccoli
2 Tbs. chopped onions
1 1/2 cups milk
2 slices of bread
1/2 cup boiling water
4 Tbs. butter
3 Tbs. flour
1/2 cup grated cheese

Add 1/2 tsp. salt to boiling water; add broccoli.  Return to boiling; cook 5 minutes.  Drain.  Melt 2 Tbs. butter in a 1 qt. saucepan.  Add chopped onions & cook until golden.  Add remaining salt and flour.  Mix well.  Add milk.  Cook, stirring constantly until thickened.  Remove from heat.  Stir in grated cheese.  Place cooked broccoli in a 1 quart casserole.  Pour cheese sauce over top.  Cut crust off the bread and cube into 1/2 inch cubes.  Mix bread with remaining melted butter.  Sprinkle over top of casserole.  Bake 20-25 minutes at 350 degrees.
