Baked Potato Casserole

This is the dish, Ladies (and gentleman, too)! This is my go-to side dish recipe for potlucks, BBQ’s, serving a crowd, needing some comfort food…..This. Is. The. One.

This dish is devoured every time I make it. And it’s SO easy. And yummy.

This dish can be made the simple way. Or, if you are feeling fancy and you want to show off, you can make it the Food Network Star way. I’ll tell you the secrets to both. Oh. Yeah.

Baked Potato Casserole


Instant Potatoes
Sour cream (8 oz for an 8 x 8 dish. 12 oz for a 9 x 13.)
Real Bacon Pieces
Shredded Cheese (get a 2 cup bag or more for larger dishes)
Chives (optional)

Preheat your oven to 350. Prepare the instant potatoes per the instructions on the box and salt and pepper them to taste. For an 8 x 8 dish, I make 6-7 servings. Or, make some mashed potatoes from scratch if you want to be FANCY!! Spread the mashed potatoes in the bottom of your baking dish. Top with a layer of sour cream. Sprinkle a layer of shredded cheese on top of the sour cream. Top the cheese with real bacon pieces. If you are making the Food Network Star potatoes, you can fry real bacon and chop it up. You can also add some chives to the top. Yum-E. Now place potatoes in your preheated oven for 10-15 minutes until the cheese is nice and melted. Enjoy!!
