Angel Hair Pomodoro

Ah, the rewards of having a garden!  It’s been so nice to actually have fresh garden veggies this year!  Even if you don’t grown your own tomatoes and basil, this is a perfect quick & easy summer meal.  It takes about 15-20 minutes from start to finish, and half of that time is spent waiting for your water to boil.

Angel Hair Pomodoro

1 package angel hair pasta, cooked and drained
cloves from 1 bulb of garlic, chopped
Several handfuls of fresh basil, chopped
1-2 large tomatoes, chopped
1/3 – 1/2 cup olive oil
handful of feta cheese crumbles (@ 1/2 – 3/4 cup)

Cook your pasta.  While cooking, heat garlic in olive oil over medium heat for 2-3 minutes.  Add tomatoes and basil, continue to cook for several more minutes as the tomatoes begin to cook down.  Add the cheese and stir until melted.

At this point, normally, I would just pour the sauce all over the drained angel hair pasta, but my youngest doesn’t like “sauce” on her pasta, so I just serve it separately.  You can do either way – it tastes great regardless!
