ABC Sopa

ABC Sopa is a fun and easy side dish.  The kids love it.  You make it in the same way you would make Mexican rice or fideo, which I’ve been privileged to learn from my mother-in-law, who makes the best Mexican food!  Here are the cast of characters:

Ingredients:  2 packages small ABC pasta or vermacelli, 1 can or 1/2 box chicken broth, salsa, garlic & cumin.  You’ll also need a little oil.

Put about 1-2 T. oil in a skillet with your ABC pasta.


You want to “brown” the pasta on medium-high heat.  It will begin to turn a nice golden color.


Turn your burner down to low, and add 2-3 cloves of chopped garlic.  Stir in, and then add about 2 Tablespoons of cumin and about 1/2 cup to 2/3 cup salsa.


Next pour in your chicken broth.  Use either 1 can or about half a box.  It will cover the ABCs.


Bring the mixture to a boil, then reduce to low and cover.


Stir occasionally so that the ABCs don’t stick to the bottom of the pan.   They should be done in about 20 minutes.


If you’d prefer not to use cute ABCs, you can use fideo, which is just short pieces of vermicelli, and you cook it the exact same way.  The pasta will be tender when done.
