My family loves pasta, and I love Mel’s Kitchen Cafe website. When I saw this one come through my news feed, I knew I needed to make it.
Original Recipe: Creamy Tuscan Pasta Sauce by Mel’s Kitchen Cafe
Modifications: I didn’t have a full 8 oz. of sundried tomatoes, so I just used what I had. I also added some shredded chicken (stirred in at the end) to the dish to give it a bit more protein.
Procedure: It’s much like making alfredo sauce. Not too difficult.
Verdict: We all liked this dish. Even my picky eater surprised me by commenting “I love the chicken in this.” Wow. Compliments from her in the food arena are few and far between, so I was impressed. I would totally make this again. I thought it could use a little more tomato flavor to consider it “Tuscan” but maybe it was just because I didn’t have enough tomatoes. I might add in a little tomato sauce to the sauce next time to give it some additional flavor, but it was still yummy as is.
