31 Days of Menu Planning – Asian Week + Grocery List

So, I know this is probably a stretch, because my family is not too fond of seafood, so I had to choose meals they would actually eat to fit into this menu.  Because, hey – we’re going to eat all these meals!  Full disclosure – I have not made all these recipes yet, so I can’t promise they’re all yummy – but they look it!

Sunday – Chicken Lettuce Wraps
Monday – Ground Beef Lo Mein
Tuesday – Chicken Egg Rolls
Wednesday – Slow Cooker Korean Beef, White Rice
Thursday –  Chicken Fried Rice, Broccoli
Friday – Honey Chicken, White Rice
Saturday – Wonton Soup

Sunday

1 tablespoon olive oil
1 pound ground chicken
2 cloves garlic, minced
1 onion, diced
1/4 cup hoisin sauce
2 tablespoons soy sauce
1 tablespoon rice wine vinegar
1 tablespoon freshly grated ginger
1 tablespoon Sriracha, optional
1 (8-ounce) can whole water chestnuts, drained and diced
2 green onions, thinly sliced
Kosher salt and freshly ground black pepper, to taste
1 head butter lettuce

Monday

8 oz lean ground beef
1 stalk celery or bok choy, sliced
¼ cup baby carrots, julienne
¼ cup sliced onions
1 clove garlic, minced
1 tbs light soy sauce
1 tbs oil
½ tsp sugar
½ tsp salt
8 oz spaghetti (dry)
1 tbs dark soy sauce (substitute is 1 tbs regular soy sauce  and ½ tsp molasses)
1 tbs Chinese rice wine or dry sherry
1 tsp dark sesame oil

Tuesday

1 pk. rice spring roll wrappers
1 bag of cabbage/carrot mix
1 lb. shredded cooked chicken
4 Tbs. soy sauce
3 cloves garlic, chopped
1/2 can water chestnuts, drained & chopped
A few chopped chives

Wednesday

2 pounds chuck roast, cut into bite size pieces
½ cup light brown sugar
½ cup low sodium soy sauce
6 cloves garlic, minced
2 teaspoons ginger, minced
1 tablespoon sesame oil
2 tablespoons rice vinegar
2 teaspoons Sriracha, or more to taste
1-2 tablespoons cornstarch
2 cups white rice
2 Tbs. butter
1.5 tsp. salt

Slow-Cooker Korean Beef Recipe HERE.
For white rice, bring 4 cups water plus 1.5 teaspoon of salt and 2 Tbs. of butter to a boil.  Stir in rice.  Cover, reduce heat to medium-low.  Cook, covered, for 20 minutes.  (DO NOT LIFT LID).  Fluff with fork.

Thursday

1-2 Crowns of broccoli, steamed or roasted
2 cups uncooked white rice, cooked according to package directions
3 eggs
1/2 large carrot, shredded
1/2 small onion, finely chopped
3-4 cloves garlic, pressed
ground pepper
cooked, diced chicken pieces, if desired
2 Tbs. butter
2-3 Tbs. soy sauce

Friday

2 cups dry white rice, cooked
1/2 cup vegetable oil
1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
1 cup all-purpose flour
1 cup buttermilk
1 tablespoon cornstarch
1/2 cup honey
2 tablespoons reduced sodium soy sauce
1 tablespoon apple cider vinegar
1 teaspoon sesame oil
1/2 teaspoon crushed red pepper flakes, or more, to taste

Honey Chicken Recipe HERE.  Serve over rice.

Saturday

2 lbs. ground chicken
1 bunch of cilantro (about 3.5 cups), loosely chopped
4 cloves garlic, halved
3 tablespoons ginger, chopped
3 tablespoons soy sauce
1 tablespoon sesame oil
80-90 wonton wrappers
3 cups chicken stock
2 cups water, divided
1/4 teaspoon salt
1 tablespoon dark soy sauce (or regular soy sauce)
1/2 tablespoon sesame oil
1 tablespoon fresh cilantro, chopped
1 teaspoon green onions, sliced

Grocery List

1 bunch green onions
2-3 bulbs garlic
2 onions
2-3 inches ginger root
1 head butter lettuce
1 stalk celery
1 bag baby carrots
1 bag carrot/cabbage mix
1 bunch green onions/chives
2 crowns broccoli
1 bunch chilantro
Dark sesame oil
soy sauce
hoisin sauce
Siracha
1 box spaghetti noodles
1 box chicken sock
2 (8 oz.) cans water chestnuts
1 pk. rice spring roll wrappers
80-90 wonton wrappers
3 lb. ground chicken
1 pk. chicken breasts (cook and split between Tues, Thurs & Fri)
1 lb. ground beef
2 lb. chuck roast
1 qt. buttermilk
white rice (need 6 cups)

Should have on hand, but purchase if not:

olive oil
rice wine vinegar
sugar
salt
pepper
honey (1/2 cup)
molasses
Rice Wine or Dry Sherry
cornstarch
butter
brown sugar (1/2 cup)
eggs (3)
vegetable oil
flour (1 c)
apple cider vinegar
red pepper flakes
