So, our family is hugely into all things Harry Potter, and I thought it would be fun to create a HP-themed menu plan. However, after thinking, browsing, and going down the HP-internet-rabbit-hole, I can’t come up with enough meals for an entire week. Most of the cool-looking HP foods are sweets, and it wouldn’t be responsible to eat a week full of nothing but sweets!
So, instead, I encourage you to make some Shepherd’s Pie, then try out this Pumpkin Pastie recipe that looks pretty easy and of course, top it off with some butterbeer! I know, I know… I’m a slacker. But we had a busy weekend, and my brain is in complete Monday mode!
Shepherd’s pie can be super easy if you let it! Just brown some ground beef seasoned with garlic, salt & pepper. That becomes the bottom layer of your pie. Next, steam some veggies (I cheat and use the prepared broccoli/carrot slaw from the grocery store) in some butter in the microwave. That becomes layer 2. Then top with a layer of mashed potatoes (you can even get this already prepared too, if you’re short on time), and then with grated cheese. All the food is already cooked, so you are just heating it through in the oven for a few minutes at 350 degrees until the cheese on top is nice and bubbly. Easy peasy!
