Week 8 Meal Plan

Sunday – Garlic Parmesan Crusted Chicken, Green Beans
Monday – Shepherd’s Pie
Tuesday – Cheese Enchiladas, Mexican Rice
Wednesday – Korean Beef, White Rice
Thursday – Lasagna, Garlic Bread
Friday – Cheesy Chicken & Rice Skillet, Salad
Saturday – Naan, Chicken Gyros, Couscous
Extras – Chocolate Caramel Brownies, Rice Krispie Treats


5 boneless, skinless chicken breasts, pounded to 3/4 inch thickness
1/2 cup olive oil
1/2 cup ranch dressing
3 Tbsp Worcestershire sauce
1 tsp vinegar
1 tsp lemon juice
1 Tbsp minced garlic
1/2 tsp pepper
1/4 cup grated Parmesan
1/4 cup ranch dressing
1/2 cup panko bread crumbs
1 teaspoons garlic powder
1/3 cup shredded Parmesan
2 tablespoons melted butter
1 cup shredded mozzarella
1 large can green beans

Cook green beans in microwave.
Use THIS recipe for the chicken.


1 lb. ground beef
salt, pepper
broccoli/carrot slaw
Prepared Mashed potatoes (cooked to microwave instructions)
2 cups grated cheddar cheese

Shepherd’s pie can be super easy if you let it!  Just brown some ground beef seasoned with garlic, salt & pepper.  That becomes the bottom layer of your pie.  Next, steam the veggies in some butter in the microwave.  That becomes layer 2.  Then top with a layer of mashed potatoes, and then with grated cheese.  All the food is already cooked, so you are just heating it through in the oven for a few minutes at 350 degrees until the cheese on top is nice and bubbly.


1 large can enchilada sauce
24 corn tortillas
3 cups grated cheddar cheese
vegetable oil
1-2 Tbs. Oil or butter
1 c. long grain white rice
2-4 cloves garlic, chopped
1 can chicken broth or 1/2 box of chicken stock
1 can water
About 1/2 cup of salsa, Rotel, or tomatoes
Cumin – a couple of Tbs.

Make cheese enchiladas according to THIS recipe.

2 pounds chuck roast, cut into bite size pieces
½ cup light brown sugar
½ cup low sodium soy sauce
6 cloves garlic, minced
2 teaspoons ginger, minced
1 tablespoon sesame oil
2 tablespoons rice vinegar
2 teaspoons Sriracha, or more to taste
1-2 tablespoons cornstarch
1 c. White rice

Cook basic white rice according to package instructions.
Use THIS recipe for Korean Beef (I haven’t made this before but it looks yummy).


1 package of frozen garlic bread, cooked to package instructions
1 carton lasagna noodles
1 lb ground beef
1 jar spaghetti sauce
1/2 cup water
1 tsp. salt
1 carton ricotta cheese
3 cups shredded mozzarella cheese
1/2 cup shredded parmesan cheese

Lasagna recipe HERE (you can make ahead the night before and keep in fridge). I use a tub of ricotta cheese instead of cottage cheese.


One bag pre-packaged salad
1/2 pound Applewood Smoked Bacon
4 tablespoons unsalted butter
1/4 cup all purpose flour
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 1/2 cups chicken broth
1 1/2 cups shredded cheddar cheese
1-2 tablespoons Hot Sauce
2 cups cooked shredded chicken
4 cups steamed white rice
1 cup shredded cheddar cheese

Use THIS recipe.  It’s heavenly.


2 lb boneless, skinless chicken thigh
½ large yellow onion, peeled and root side removed
1 sturdy wooden skewers, roughly 10 inches (25 cm)
2 cups greek yogurt
¼ cup lemon juice
¾ cup olive oil
1 tablespoon kosher salt
1 tablespoon garlic, minced
1 tablespoon paprika
1 tablespoon ground cumin
½ teaspoon cayenne pepper
1 teaspoon cinnamon
1 teaspoon black pepper
2 boxes garlic & olive oil couscous, cooked to box directions

Use THIS Naan Recipe.
Use THIS recipe for Chicken Gyros.  (I haven’t made this, but I have made the Naan).  I’m going to just use ranch dressing instead of making the cucumber sauce.


12 oz. bag chocolate chips
1 box German chocolate cake mix
1.5 stick butter
1 large can evaporated milk
1 cup chopped pecans (I omitted)
75 caramels

Use THIS recipe for Caramel Chocolate Brownies.

tablespoons (1 stick) butter
16 ounces large marshmallows
1 teaspoon pure vanilla extract
Pinch coarse, kosher salt
9 cups crisp rice cereal (i.e. Rice Krispies)

Use THIS recipe for Rice Krispie treats.  It’s awesome.

1 pk shredded parmesan
1 container ricotta cheese
1 box panko bread crumbs
1 pk. long grain white rice
2 boxes chicken stock
1 German Chocolate cake mix
1 can evaporated milk
75 caramels (kraft)
16 oz. marshmallows
1 pk. precooked, shredded chicken
1 pk. lasagna noodles
1 jar spaghetti sauce
1 large can green beans
1 large can enchilada sauce
1 can Rotel
1 frozen loaf garlic bread
1 box Rice Krispies
