Week 6 Menu

Sunday – Deli Sandwiches, Chips & Guacamole
Monday – Zuppa Toscana, Italian Bread
Tuesday – Chicken Enchiladas, Fideo
Wednesday – Sloppy Joes, Potato Chips
Thursday – Broccoli Alfredo Stuffed Shells, Garlic Bread
Friday – Stuffed Baked Potatoes
Saturday – Eggrolls, Wonton Soup
Extras – Strawberry Bread, Lemonade Pie


Bollio rolls (one per sandwich)
Deli meat – ham/turkey
Sliced Cheese – Provolone or Colby Jack
sliced pickles
Guacamole (4 avocados, lime juice)
1 bag tortilla chips

For guacamole, mash up 4 avocados and a splash of lime juice with a fork until mostly creamy.

Split bollio rolls lengthwise. Place open on a cookie sheet. On one side of the bread, layer two slices of cheese, on the other side, layer several slices of ham/turkey (kind of crumpled up, not flat). Put under the broiler for 3-4 minutes, until cheese starts to melt/brown. Once out, put some guacamole, pickles, and cilantro leaves on each sandwich.  Close the sandwiches. Serve with extra guacamole and tortilla chips.


1 lb ground Hot Italian sausage
1 bag Simply Potatoes diced potatoes and onions
2 cloves large garlic
1 box chicken stock
1/2 bunch kale
1 cup heavy cream
2 Tbsp flour
Salt and pepper to taste
loaf of Italian bread – warm in oven until nice and toasty.

My family loves this Olive Garden soup!  I just usually go search Pinterest for the recipe every time I make it.  Last I used THIS recipe which was super easy because it used pre-diced potatoes and you cook it in the crock pot!


1 T butter
1 medium onion chopped
8 oz softened cream cheese
3.5 C cooked chicken, shredded or chopped
flour tortillas
16 oz package monterey jack cheese
2 C whipping cream
1 package vermicelli (fideo)
1 can/box of chicken stock
Rotel (or salsa)

Fideo recipe HERE. (The recipe is for ABCs, but just use the regular fideo).

Use THIS recipe for the chicken enchiladas.


Value pack of “stew beef”
1 jar Kraft bbq sauce
pickle juice
hamburger buns
1 bag potato chips

Cook chopped beef according to THIS recipe.

Butter both insides of hamburger buns and put under the broiler 2-3 minutes until toasted. Serve meat on top of buns and top with grated cheddar. (Use leftover chopped beef for baked potatoes on Friday).


1 jar (16 oz) alfredo sauce
2 cups cooked chicken, shredded
2 cups cooked broccoli, chopped
1 cup shredded cheddar (or mozzaerlla) cheese
¼ cup shredded parmesan
1 box jumbo pasta shells,
1 jar spaghetti sauce
Salt/Pepper to season (if needed)
1 package frozen garlic bread, cooked to package instructions.

Use THIS recipe for the stuffed shells.


6 large russet potatoes
grated cheddar
sour cream
bacon pieces
chopped beef (from sloppy joes on Wednesday)
1 onion, chopped

Wash potatoes and poke each one several times with a fork. Wrap each potato in aluminum foil. Bake at 425 degrees for 1 hour.


1 pk. rice spring roll wrappers
1 bag of cabbage/carrot mix
1 lb. shredded cooked chicken
4 Tbs. soy sauce
3 cloves garlic, chopped
1/2 can water chestnuts, drained & chopped

2 lbs. ground chicken
1 bunch of cilantro (about 3.5 cups), loosely chopped
4 cloves garlic, halved
3 tablespoons ginger, chopped
3 tablespoons soy sauce
1 tablespoon sesame oil
80-90 wonton wrappers

3 cups chicken stock
2 cups water, divided
1/4 teaspoon salt
1 tablespoon dark soy sauce (or regular soy sauce)
1/2 tablespoon sesame oil
1 tablespoon fresh cilantro, chopped
1 teaspoon green onions, sliced

Full Disclosure – I have never made wontons or wonton soup, but these recipes look awesome and I am going to try them!


3 cups flour
2 cups sugar
1 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
4 eggs, beaten
20 oz. pureed strawberries
1.25 cups vegetable oil
1 small can frozen lemonade
1 can Eagle Brand sweetened condensed milk
1 container Cool Whip
1 graham cracker crust

Strawberry Bread recipe HERE.
For the lemonade pie, mix frozen lemonade with sweetened condensed milk and cool whip.  Place in graham cracker crust and let set in the fridge.

1 bunch green onion (only need a little – chop & freeze the rest)
4 avocados
1 head garlic
1 bunch kale

2 crowns broccoli
6 russet potatoes
1 bag cabbage/carrot mix
Deli ham
Deli turkey
1 lb. ground Italian sausage
2 lb. ground chicken
1 large rotisserie chicken – shred meat to use T, T & Sat
value pack of stew beef
1 small container sour cream
Cheese slices
1 large bag shredded mexican blend cheese
1 pint heavy whipping cream
shredded parmesan
1 pk. bacon pieces
3 boxes chicken stock
1 pk. vermicelli (fideo)
1 box jumbo pasta shells
1 jar alfredo sauce
1 jar spaghetti sauce
1 can Rotel
1 jar Kraft bbq sauce
1 pk. rice spring roll wrappers
80-90 wonton wrappers
1 can water chestnuts
1 bag frozen diced potatoes & onions
1 pk. frozen garlic bread
1 bag tortilla chips
1 bag potato chips

Purchase if you don’t have on hand:

Sliced Pickles
Lime Juice
Flour (need 2 Tbs)
Butter (1 stick or less)
Soy Sauce (need 8 Tbs.)
Sesame oil
