Week 5 Meal Plan

Sunday – French Bread Pizzas
Monday – Lasagna Soup
Tuesday – Tacos, Mexican Rice
Wednesday – Slow Cooker Ham, Broccoli Cheese Casserole
Thursday –  Fettuccine Alfredo, Garlic Bread
Friday – Chicken Lettuce Wraps, Mixed Veggie Tots
Saturday – Ham & Pasta Skillet Dinner, Homemade Bread
Extra – Snickerdoodles, Chips & Salsa

Sunday

2 loaves of French Bread
1 jar of pizza sauce
Any pizza toppings your family likes (Pepperoni, Canadian Bacon, green peppers, onion, pineapple, mushrooms, olives,  tomatoes, etc)
Mozzarella Cheese shredded

Monday

1 1/2 pounds Italian sausage
1 medium yellow onion
4 cloves garlic
dried oregano
dried crushed red pepper
3 tablespoons tomato paste
1 (28-ounce) can fire roasted diced tomatoes
2 bay leaves
6 cups low-sodium chicken broth
1/2 cup plus 1 T chopped fresh basil or 3.5 tablespoons dried basil
1/2 pound fusilli noodles
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
salt & pepper
shredded mozzarella cheese

Lasagna Soup Recipe HERE.  I’ve made this so many times.  It’s a family favorite!

Tuesday

1 lb ground beef
1 pk taco seasoning
1 sm. can tomato sauce
grated cheddar
chopped onions
shredded lettuce
1 roma tomato, chopped
1 pk. hard taco shells
1 cups long grain white rice
2 cups chicken stock
1/2 cup salsa
3 cloves garlic

Cook the ground beef according to the taco seasoning packet instructions. Add 1 small can tomato sauce.  Warm taco shells in the oven, then fill will beef mixture and toppings.

For Mexican Rice, I use THIS recipe.

Wednesday

spiral-cut ham (bone-in or boneless)
1 cup dark brown sugar
1/2 cup pure maple syrup
2 cups pineapple juice
salt
1 box frozen broccoli
2 Tbs. chopped onions
1 1/2 cups milk
2 slices of bread
4 Tbs. butter
3 Tbs. flour
1/2 cup grated cheese

Use THIS recipe to cook the ham in the crock pot.
Use THIS recipe for the Broccoli Cheese Casserole.

Thursday

1 box Fettuccine or Linguini pasta
1 stick butter
8 oz. cream cheese
garlic powder
2 cups milk
6 oz. grated parmesan cheese
black pepper
nutmeg
Frozen garlic bread, cooked to package instructions

Cook your noodles.  While they are cooking, melt the butter and cream cheese in a pan on medium heat.  Add 1 Tbs. garlic powder and slowly add the milk, and then the grated parmesan a little at a time.  Whisk until smooth and thick.  Add 1/4 tsp. nutmeg and ground black pepper to taste.  Mix with cooked, drained noodles.

Friday

olive oil
1 pound ground chicken
2 cloves garlic
1 onion, diced
1/4 cup hoisin sauce
2 tablespoons soy sauce
1 tablespoon rice wine vinegar
1 tablespoon freshly grated ginger
1 tablespoon Sriracha, optional
1 (8-ounce) can whole water chestnuts, drained and diced
2 green onions, thinly sliced
Kosher salt and freshly ground black pepper, to taste
1 head butter lettuce
1 zucchini
1 russet potato, peeled
½ head broccoli
1 carrot, peeled
salt & pepper
⅓ cup grated parmesan
⅓ cup panko breadcrumb
1 teaspoon onion powder
1 teaspoon garlic powder
1 egg
olive oil

Use THIS recipe for chicken lettuce wraps.
Use THIS recipe for veggie tots.  I plan to use a russet potato instead of a sweet potato because I’m not a sweet potato fan.

Saturday

1 box tube or shell pasta
3 tablespoons olive oil
1 tablespoon butter
3 cups fully cooked ham, diced (use Wednesday leftovers)
1 large sweet red pepper, diced
1/2 medium onion, chopped
1/4 cup minced fresh parsley
2 garlic cloves, minced
1/2 teaspoon dried basil
1/2 tsp dried oregano
1 1/2 cups chicken broth or chicken stock
1 T freshly squeezed lemon juice
3/4 cup shredded Parmesan cheese
1 Tbs. yeast
2 and 7/8 cups warm water
1/2 cup local honey
1 spoonful soft butter (@ 1-2 Tbs.)
1 Tbs. salt
1/4 tsp. baking soda
3 cups whole wheat flour
4 cups unbleached white flour

Make sure to start your bread at least 2 hours from when you want to serve it. Use THIS recipe.  I’m choosing to leave out the flaxseed and buckwheat flour this time. Use some of the bread dough to make bollio-sized rolls for deli sandwiches next week!

Use THIS recipe for the ham and pasta skillet dinner.

Extras

1 cup shortening
1.5 cup sugar
2 eggs
2.75 cups flour
2 tsp cream of tartar
1 tsp baking soda
1/2 tsp salt
cinnamon/sugar mixture
32-oz can of crushed tomatoes
1 bunch cilantro
1 onion
5-6 cloves garlic
1-2 jalapenos
1 lime

Use THIS recipe for the Snickerdoodles.
Use THIS recipe for the salsa.

1 box fusilli noodles, or any fun-shaped noodles
1 box Fettuccine noodles
1 box small shell pasta
1 pk.fusilli noodles
1 jar pizza sauce
1 pk. pepperoni
1 jar sliced olives
1 jar hoisin sauce
1 jar Sriracha (optional)
1 can water chestnuts
tomato paste
1 can tomato sauce (small)
1 can fire roasted, diced tomatoes
3 boxes chicken stock
1 pk taco seasoning
1 box taco shells
panko bread crumbs
yeast (need 1 Tbs.)
1 box frozen broccoli
1 pk. frozen garlic bread
