31 Days of Meal Planning – Low Carb Week + Grocery List

I love the results when I’m disciplined enough to eat low-carb.  Unfortunately, if I don’t stick with it, the pounds just creep back up, and it’s hard for me to commit to doing it long-term.  For those of you who are awesome, and eat this way, here’s a meal plan just for you!

Low Carb Meal Plan

Sunday – Grilled chicken, grilled okra, bacon-wrapped asparagus
Monday – Spaghetti Squash with Pesto
Tuesday – Taco Salad, Salsa
Wednesday – Pot Roast
Thursday – South of the Border Steaks, Roasted Broccoli
Friday – Chicken Lettuce Wraps, Veggie Tots
Saturday – Crock Pot Chili

Sunday

1 pk. chicken breasts, grilled
okra
olive oil
grill seasoning
asparagus
bacon

For okra, toss in olive oil and grill seasoning before putting on skewers and cooking on the grill.  For the asparagus, cut bacon lengthwise, then wrap each asparagus individually with a strip of bacon.  Cook in a 400 degree oven for 20-25 minutes.

Monday

Spaghetti Squash
1 container pesto

Cut and seed the spaghetti squash.  Place open side down in a dish with 1/4 inch water, covered securely with saran wrap.  Cook in microwave 18 minutes or until soft.  “Shred” the squash, season with salt, pepper and pesto.

Tuesday 

1 large can crushed tomatoes
1 bunch cilantro
5-6 cloves garlic
1 large onion (use half for salsa and chop other half for taco salad)
1 jalapeno
2 lb. ground beef
2 tomatoes, chopped
sliced olives
grated cheddar
sour cream
1 head of lettuce, chopped

For taco salad, brown and season the meat then pile all the things. :)

Wednesday 

2.5 lb. rump roast
3-4 shallots
1 bag red potatoes
1 bag baby carrots
1 bunch celery stalks
1 head garlic
1 can beef stock (about 1 cup)
1 pk onion soup mix
1 pk ranch dressing mix
1 can diced tomatoes, drained.

Prep THIS recipe ahead the night before and just throw in the crock part in the morning.  Leave out the potatoes or just let someone else eat them.

Thursday

1-2 broccoli crowns
olive oil
2-3 cloves garlic
1 Grilling steak per person – pick your favorite cut
1 head of chopped cilantro
1 can of petite diced tomatoes
lemon juice
1-2 cups grated cheddar cheese

Friday

olive oil
1 pound ground chicken
2 cloves garlic
1 onion, diced
1/4 cup hoisin sauce
2 tablespoons soy sauce
1 tablespoon rice wine vinegar
1 tablespoon freshly grated ginger
1 tablespoon Sriracha, optional
1 (8-ounce) can whole water chestnuts, drained and diced
2 green onions, thinly sliced
Kosher salt and freshly ground black pepper, to taste
1 head butter lettuce
1 zucchini
1 sweet potato, peeled
½ head broccoli
1 carrot, peeled
salt & pepper
⅓ cup grated parmesan
⅓ cup panko breadcrumb
1 teaspoon onion powder
1 teaspoon garlic powder
1 egg
olive oil

Use THIS recipe for chicken lettuce wraps.
Use THIS recipe for veggie tots.

Saturday

2 lb. chili meat
1 lb. ground beef
1 can tomato sauce
1/3 cup chili powder
salt
paprika
ground pepper
cumin
onion powder
garlic powder
oregano
spicy mustard
1 onion, chopped – for topping
grated cheddar cheese – for topping

1 pk chicken breast
1 lb. ground chicken
1 pk bacon

1 bunch asparagus
1 spaghetti squash
1 bulb garlic
3 onions
3-4 shallots

1 head iceburg lettuce
1 head butter lettuce
1 bag red potatoes
1 bunch celery
1 bag baby carrots
2 broccoli crowns
1 inch ginger root
1 package grated parmesan
1 package grated cheddar
small container sour cream
1 pk onion soup mix
1 pk ranch dressing mix
1 container pesto
1 large can crushed tomatoes
1 can petite diced tomatoes
1 box beef stock
1 can water chestnuts
1 can tomato sauce
